The tomato is a vegetable widely cultivated in the most diverse regions due to its adaptability and high demand for the fruit. In the State of Rio de Janeiro, tomato production is approximately 205 thousand tons per year. This crop is heavily attacked by pests and diseases, so its cultivation uses an excessive amount of pesticides. It was in the search for more sustainable production that the Production System called TOMATEC emerged. This system is based on the premise of producing high quality tomatoes in terms of flavor, consistency and the absence of pesticide residues. However, some problems still persist, such as: lack of uniformity in the maturation stage of tomatoes, useful life not yet defined and dependent on post-harvest care. The tomatoes used in the experiments were harvested on properties that produce tomatoes in the TOMATEC system in the state of Rio de Janeiro and the objective of this work was to provide post-harvest technologies and evaluate their effects on the quality of tomatoes grown in that sustainable production system. Ethylene was applied to uniformize the ripening of tomatoes in a bunch, testing them. the times of 16 and 24 hours to verify the influence of the application of gas on the uniformity of the color of the skin of the fruits. The fruits were harvested at the mature green stage and the concentration of the mixture containing ethylene was maintained at 150 μL.L-1. In the search for extending the useful life and maintaining the tomato quality, experiments were also carried out with coatings such as: gelatin, glycerol, cornstarch, Carboxy Methyl Cellulose (CMC), sodium alginate and calcium lactate. After the application of these technologies, physical and chemical analyzes were performed. The results achieved in this work demonstrate that tomatoes exposed to exogenous ethylene for 24 hours at a concentration of 150µL L-1 showed the most uniform color. In the first experiment with edible coating, it was found that the maturation proceeded normal, since the fruits “once and for all” matured on the fourth day of evaluation, but on the ninth day of storage, both the ripe and the “once and for all” were in condition of consumption. From the ninth day on, the fruits started to deteriorate and significantly affected their appearance. In the second experiment, it was concluded that the fruits remained in a consumption condition for 6 days at room temperature, despite being evaluated until the ninth day. From the sixth day onwards, both the control treatment and the coated fruits showed fruits with signs of deterioration. The coatings used contributed to the appearance of the fruits, making them brighter. The results achieved by the present study will contribute to future studies in the provision of new technologies for applying the TOMATEC production system to all tomato-producing regions
