The Pupunha palm (Bactris gasipaes Kunth) is considered an unconventional vegetable, being considered a highly perishable product and therefore, studies are necessary to extend its shelf life. Faced with this demand, this research aimed to extend the shelf life of the Pupunha palm in natura in different cuts with the use of packaging and refrigeration. The strains were harvested, sanitized and submitted to treatments. Each meristematic region of the heart of palmito originated a type of cut (Tolete, Sliced and Picado), and the samples of each cut were submitted to 6 forms of conditioning: control (C), frozen heart of palm, unperforated polyethylene bag ), perforated polyethylene bag (SPP), microperforated polyethylene bag (SPMP) and styrofoam tray + PVC film (BIPF), where the frozen heart of palm was subjected to freezing temperatures (-5 ± 2oC), and the other samples were stored under refrigeration conditions (5oC ± 2oC) until the 24th day and at room temperature until the 25th day of storage. The objective of the present study was to evaluate the effect of pH and visual evaluations (evaluation of physiological deterioration) and Microbiological: initial coliforms (presumptive test), coliforms total, fecal coliforms and total mesophylls.  The statistical design adopted for the experiment for the physico-chemical evaluations was completely randomized, in a factorial scheme 6x8 (Wrapping Forms X Evaluation Periods) with 5 replications, for each of the 3 cutting types. For the experiment with the microbiological evaluations, the design was completely randomized, in a 6x3 factorial scheme with 3 replicates, where the mixture of the three types of cut was submitted to six forms of storage and three storage times (in days), with 3 replicates and 3 replicates. The results obtained in the two experiments indicate that the use of plastic packaging combined with refrigeration was efficient in prolonging the life span of the pupunha palm in natura for all types of cutting, reducing the contamination of the samples in them conditioned. The high values of loss of mass presented by the control treatments in all types of cutting demonstrated the importance of the use of plastic packaging for the packaging of samples of palm heart to prevent losses in the commercialization of the same. The use of the packages that presented the best performances within each result shown for each type of cut is indicated if different types of packaging present similar results and it is indicated that the packaging having lower values of purchase is acquired, since the acquisition of cheaper packaging will influence the profit obtained by them.
