Obesity is a significant global challenge, affecting more than 400 million people worldwide. As well as being a risk factor for chronic diseases, visceral obesity is linked to metabolic complications. Insulin resistance plays a crucial role, associated with metabolic and cardiovascular conditions. The relationship between obesity, insulin resistance and cardiovascular diseases involves the production of reactive oxygen species, triggering inflammatory processes.
Regional foods, such as camu-camu from the Amazon region, are being studied for their potential benefits in the prevention and treatment of obesity. Camu-camu is a "superfruit" rich in bioactive compounds and antioxidants, and stands out for its high concentration of vitamin C. Preliminary studies indicate that the polyphenols present in the fruit have the potential to reduce blood sugar levels. However, few studies have been carried out on the fruit for this purpose, let alone the leaf. The study proposes the use of ultrasound, considered environmentally friendly, to extract bioactive compounds from camu-camu (leaf and fruit), optimizing the process with the response surface methodology (RSM) and the multi-response optimization (MRO) approach. Furthermore, to evaluate the efficacy of these extracts in mitigating metabolic and liver alterations in experimental models of obesity.
