SUMMARY:

Functional foods enriched with antioxidants are gaining prominence as their consumption is associated with benefits to the body. Bee products are natural foods that have significant amounts of functional compounds which are of great interest to human health. Phenolic compounds are examples of plant secondary metabolites that are present in significant amounts and protect against stress and oxidative damage and can be found in honey, propolis and royal jelly. However, these compounds have high chemical instability and high susceptibility to adverse conditions, as well as being easily degraded by the human organism, having their effects directly linked to their stability and bioavailability. Microencapsulation is a relatively recent technology that emerges as an alternative for the protection of sensitive compounds from degradation, in order to add value to a product by offering functionalities. Ionic gelation is the encapsulation technique that is based on the interaction of polyelectrolytes by crosslinking in the presence of ions and can serve as a useful tool to enable the protection of bioactive compounds in food. The objective of this work is to encapsulate honey, propolis and royal jelly by ionic gelation and to evaluate the stability of the generated particles, the in vitro release profile and the application in a gelatin food matrix to obtain a candy.
