RESUMO:

The Brazilian Amazon region is characterized by a huge biodiversity of flora and fauna, with
fruit and oilseed production present in food in various forms, adding nutritional value, source
of bioactive substances and its importance and valorization of great importance. Nuts and
seeds have a dense energy and a high content of fat, protein, fiber, vitamins and minerals. It is
observed that its consumption is related to the supply of important content of tocopherols and
phenolic compounds, which have antioxidant effect. The importance of the research is linked
to the fact that the species of nuts studied are endangered. Therefore, it is essential to deepen
the food potential and the uses of unused nuts such as a Chestnut (Couepia edulis Prance) and
Chestnut Chicken (Couepia longipendula) from Amazonia and Sapucaia Nut (Lecythis
pisonis), contributing as an alternative source of nutrients in substitution as commonly used
species. With the objective of increasing the knowledge about a nutritional composition of
Amazonian nuts still little used, this work evaluates the physical and chemical characteristics,
no products such as nuts will be analyzed for substances, proteins, total carbohydrates, lipids,
dietary fibers and ashes. the nutritional benefits that its consumption can offer food safety,
through the microbiological analysis of the fruits, allowing to make a comparison with the
well-known Brazil nut (Bertholletia excelsa).
