SUMMARY:

Collagen is an organic peptide present in mammals as a tissue-based protein. There are 29 different types of collagen and type I collagen naturally forms the majority of mammalian tissue structures, as well as in bovine bones, which make up 90% of the protein matrix. The type I collagen structure has the unique composition of three polypeptide chains arranged in a triple helix and grouped into fibers. The collagen type I processes obtaining employ different chemical agents and methodologies, and each method or physical-chemical condition will result in a material with different physical, chemical and morphological properties. Defining strategies to enable the development of type I collagen obtaining from waste materials, along with the emerging technologies highlighted, reinvents possible use of type I collagen as an industrial input and for this, innovation and research are necessary. The study proposal provides for efficient hydrolytic processes focused on bovine bone as emerging technologies to develop type I collagen as an input for food, with the general objective of obtaining hydrolyzed type I collagen from the bovine deboned residue and studying the physicochemical interventions of different chemical and enzymatic agents to the processes under the influence of ultrasound. And by hydrolyzate, develop and characterize a collagen type I gel with technological potential for food.
