RESUMO:
Currently, the population has been concerned with preserving the environment and at the same time eating safe food. In this context, research on active packaging has expanded, since it is possible to produce these packages from renewable sources and incorporate antimicrobial agents into the polymer matrix, in order to be released to the food surface, the shelf life of these products. Among the antimicrobial compounds that can be used in foodstuffs, which can thus be incorporated into materials for the development of active packaging, can be mentioned the LAE (ethyl-Nα-dodecanoyl-l-arginate hydrochloride). As a cationic surfactant, the interaction of the LAE with certain polymers may have an influence on its release, so this study aims to evaluate the interaction of starches of different charges (cationic, anionic and neutral) with the LAE, with the purpose of obtaining an antimicrobial film. The surfactant-polymer interaction will be analyzed by isothermal titration calorimetry, dynamic light scattering and zeta potential. And the antimicrobial film will be produced by the casting method and characterized by analysis of thickness, color, solubility, water vapor permeability rate, surface, as well as antimicrobial and mechanical properties.
