RESUMO:

Rice (Oryza sativa L.) is one of the most important foods in the world, mainly consumed in countries of Asia, Africa and Latin America, besides it is versatile and composing several industrialized products. Rice can be found as different types and vatieties, such us whole grain (brown), white (polished rice), black, red, among others depending on the mechanical pre-processing or the type of natural pigment (anthocyanins) present in the endosperm of the grain. Other bioactives such as gamma-aminobutyric acid (GABA), which is a non-protein amino acid present in the endosperm, is also present in low amounts in the endosperm. GABA has properties that prevent cardiovascular diseases and has correlation with psychological and neurological functions, besides having tranquillizers, hypotensive and diuretic effects. Unlike animals, plants produce GABA with a calcium receptor, which activates the enzyme glutamic acid decarboxylase (GAD), thus converting the residual glutamic acid to GABA. This can be obtained via enzymatic route, which uses cellulase, germination and others. The biochemical process of germination consists of the hydrolysis of the protein and carbohydrate contained in the grain, leading to an improvement in the nutritional effects and increase of  GABA, ferulic acid, gamma-oryzanol acid and vitamin E content among other compounds. The accumulation of bioactive compounds will also depend on factors such as temperature and germination time, as well as pH and type of the cultivar. The use of the ultrasound technique has been applied to make available bioactive compounds, as well as primary and secondary metabolites, thus also influencing the production of GABA that can be applied in the food industry. Thus, the combination of processes may lead to increased GABA production in the rice grain. This work aims to evaluate how the processes of pre-germination, germination and ultrasound can be combined in order to increase the production of GABA. It is expected that these processes will be effective in optimizing GABA production in rice, adding nutritional and technological value to the product.
