SUMMARY:

Edible insects can be seen as a sustainable alternative that contributes to food
security, providing high-quality nutritional ingredients for the development of food
products. Despite the interest and importance of edible insects in the human diet,
there are some challenges to be faced in the production of insect-based foods. The
larvae of Hermetia illucens (Black soldier fly larvae - BSFL) have shown great
potential due to their high protein content and essential amino acids necessary for
human consumption. Their ingredients can be used to fortify food products that are
part of the traditional diet of the Western population and present promising
technological properties for the food industry. One of the main challenges is the
quality assurance of these new products, which can be addressed with the
development of simple, fast, low-cost and non-destructive quality control analyses.
Methodologies that reduce analysis time, energy consumption, waste quantity and
sample preservation contribute to the sustainability of the production system and
facilitate the insertion of insect-based products, especially BSFL, in the market.
Therefore, the objective of this work is to develop a defatted BSFL powder and apply
it in the development of two insect-based products: a protein drink with high
antioxidant capacity and a meat-like product based on black soldier fly larvae, using
accessible processing techniques and non-destructive analyses, such as near-
infrared spectroscopy, hyperspectral imaging and electronic nose. As a result, it is
expected to obtain a BSFL powder with adequate nutritional and technological
aspects, obtain the best parameters for the development of two BSFL-based
products and evaluate how non-destructive methods can be used to evaluate the
quality of insect-based products.
