RESUMO:

Artisanal fisheries are relevant for food production, contributing about half of the volume of world fish production and providing an excellent source of animal protein to millions of people. In the Costa Verde Region, its relevance is even greater, as the municipalities that compose it present a large part of their production from this fishery, being a source of income for many families that survive from this activity. However, artisanal fishermen are able to commercialize only the species with the greatest economic value. Thus, at the time of capture, it discards those that do not give the proper financial return, wasting a source of protein of animal origin with high biological value, as well as an important source of income. The purpose of this research is to present a general study for the implantation of a unit for the processing of marine fish originating from artisanal fishing, mainly of underutilized species and accompanying fauna, in order to provide a better financial return for the activity, by proposing the use of all fish caught for the production of gutted fish, fillets and pulp. In this way, generating work and income for the local community and, at the same time, proposing to reduce food waste and reduce waste. For the study, it will be necessary to identify the species landed, including those that are not the target of capture, as well as the monthly volume of production. The information collected will serve as a basis for the elaboration of a layout model for the processing unit that complies with the legislation in force. For the operation of this, an operational flowchart model will be proposed, where the beneficiation stages reach the best production results, optimizing time and resources. A study will also be carried out to assess the economic and financial viability of the enterprise through the use of descriptive and exploratory methodology, based on bibliographic research and case study. It is hoped to be able to generate subsidies to evaluate the implantation and implementation of a unit for processing marine fish from artisanal fisheries in the Costa Verde region, Litoral Sul Fluminense.
