SUMMARY:

Food defense comprises a set of measures designed to prevent intentional contamination. In the military context, this issue is particularly important, as it is directly linked to the health, physical performance, and operational readiness of troops. The main objective of this study is to understand and assess food defense in the military context and to propose mitigation strategies to strengthen food defense, with a focus on food services and field kitchens. The target population for this study will include various agents in the food supply chain at AMAN (Brazilian Military Academy), totaling 200 participants. Managers, suppliers, and food handlers will be evaluated cross-sectionally at a single point in time using a structured instrument. Cadets from the Quartermaster Corps will participate in a longitudinal follow-up, with questionnaires administered at two different times (before and after an educational intervention based on design thinking), allowing for the assessment of changes in knowledge, risk perception, optimistic bias, and behavioral factors. Additionally, a control group will consist of cadets from another branch of the armed forces who will not receive the intervention, enabling comparison between groups. All participants must be at least 18 years old, present at the time of data collection, and sign the informed consent form. The second stage of the study will involve developing and validating a diagnostic instrument specific to field kitchens, taking into account the logistical and structural characteristics of this context. This instrument will identify critical points and vulnerabilities, propose mitigation strategies, and support the development of a food defense plan tailored to the realities of field kitchens. In conclusion, the study is expected to reveal gaps in knowledge, risk perception, and behavioral factors related to food defense among the various actors in the food supply chain, as well as contribute to strengthening cadet training in food defense. Furthermore, validation of the instrument for field kitchens may support policies and management practices aimed at reducing vulnerabilities, thereby contributing to greater food safety within the military context.
