SUMMARY:

Lettuce is one of the most consumed and produced vegetables in Brazil, through conventional, organic and hydroponic crops. Due to the growing demand for healthy foods, the consumption of these vegetables tend to increase. However, consumers look for practical foods, boosting the production of minimally processed vegetables, which are fresh and sanitized vegetables, ready for consumption. It is necessary to pay attention to the contamination of these foods, mainly by pathogenic microorganisms, such as Escherichia coli, Staphylococcus aureus and Salmonella spp. To guarantee the safety of minimally processed vegetables, chlorine-based sanitization is commonly performed, due to the low cost and practical application. However, chlorine is corrosive, toxic and unhealthy in sanitation. Therefore, this work seeks to evaluate sanitizers alternative to chlorine such as bacteriocins and lactic acid. Then, minimally processed lettuces will be submitted to sanitization with Nisina (0.5%); Nisin (0.5%) + EDTA (0.02M); Nisin (0.5%) + EDTA (0.02M) + Natamycin (0.2%); Natamycin (0.2%) and lactic acid (2%). All sanitizations will be by immersion lasting 5 minutes. The efficiency of sanitizations will be evaluated by means of microbiological analyzes for the detection of Salmonela spp., Enterobacteriaceae, E. coli, Total count of aerobic mesophiles and molds and yeasts. The useful life of lettuces that present the best results in sanitizing treatments will be evaluated.
