SUMMARY:

The fish production chain, both globally and nationally, has a consolidated and organized Agroindustrial System (SAP), composed of different sectors that allow for the production, processing, processing and marketing of this food. However, for more than a century, the form of presentation of these products on the market has been the same (fresh, frozen, salted and dried, smoked and canned products) needing to follow consumption trends and product diversification, both in terms of form. of presentation regarding the practicality in its preparation and healthiness, since the increase in consumption of this food each year is 3.1% worldwide. The transfer of knowledge between ICTs and companies is considered a fundamental aspect to achieve an advantage and differential in a competitive environment, in addition to the technical improvement of the parties involved. In this context, this research aims to develop a tool (analytical method) based on the TRL (Technology Readiness Level) metric to characterize the scientific and technological maturity levels of fish products developed by research projects under the Graduate Program in Food Science and Technology at the Institute of Technology of the Federal Rural University of Rio do Janeiro, with an emphasis on Fish Technology. For the study will be carried out a descriptive, exploratory applied research and quali-quantitative analysis. Using bibliographic research, case study, data collection through the application of questionnaires containing semi-structured questions, and analysis of examples of referenced material. It is expected, at the end of the research, to propose a TRL calculator model, an analytical methodology, which manages the progress of RD&I activities, helping researchers in decision-making related to the development and transition of the studied product and the existing opportunities in the market. And, in this way, through the TRL method, it is possible to direct applied research in academia to obtain products showing trends and opportunities for innovation in the food sector for the consumer market.
