SUMMARY:

Polycyclic aromatic hydrocarbons (PAHs) are organic compounds derived from petroleum that have great importance in the environmental area, given their potential to cause physiological damage in marine organisms and some are recognized as toxic, carcinogenic and mutagenic in humans. The objective of this work was to identify and evaluate the concentration of PAHs present in oysters from farming and fishing in the Delta do Parnaiba region and to evaluate the bioaccessibility, after in vitro digestion, of these compounds and the potential risk of consumption of these organisms. For the extraction and evaluation of the profile and concentration of PAHs, two treatments in a 2x2 factorial scheme were used, taking into account the bioaccessibility - in vitro digestion (in natura and digested oysters - bioaccessible fraction) and the origin of the animals (natural environment or cultivation) with three replications for each treatment. The bioaccessible fraction was acquired after an in vitro digestion process, this fraction was then used to calculate the bioaccessibility of PAHs. Two PAH extraction methods were used. The extraction of PAHs from the samples in natura was carried out by the QuEChERS method. The extraction of PAHs in the digested samples (bioaccessible fraction) was performed by the liquid-liquid extraction method. The T test (α = 5%) and the ANOVA test were applied to the data set referring to the extractions to evaluate the animals' growth during the collection periods. The results found indicate that the oysters, regardless of origin, have low levels of contamination, since the average concentration of the 39 evaluated PAHs was not greater than 100 ng g-1. The bioaccessibility of compounds NAF, ACE, A, Cri, BbF and BaP was below 20% and no sample obtained a result greater than 18 μg kg-1, remaining below the level of concern estimated by ANVISA. The results indicate low risk to the consumption of oysters from the Delta do Parnaíba and, therefore, the consumption of oysters from natural environment or culture should be stimulated in order to guarantee food security for communities that depend directly or indirectly on this resource.
