SUMMARY:

The objective of this research was to evaluate the influence of storage on nutritional composition, and the physical and chemical characteristics of semi -heavy commercial laying eggs produced in a conventional tank system of two ages. Birds of the Lohman Brown lineage were housed, 415 in a redneck system and 198 in conventional system. The experiment was distributed in a factorial arrangement 2x2x2x4+1 with two creation systems (cage and rustic), two ages (37 and 45 weeks), two storage temperatures (environment and refrigeration), four storage periods (7, 14, 21 and 28 days) and control (day 0), being the egg the experimental unit. Egg collection occurred in two days (180 eggs each) in both systems. Eggs were removed for analyzes on the 0th and the rest divided so that each system had equal amounts of eggs stored in both temperatures. For physicochemical quality, were analyzed: egg weight, Haugh unit, yolk index, gem coloring, pH determination, egg components percentage, specific gravity, thickness and resistance to bark breakdown. Such procedures were the same for birds at 45 weeks of age. For centesimal analysis 30 eggs of each system were collected, and the analyzes of day 0 and the remaining learned for 28 day were room temperature and in refrigerator. The procedure was performed from the formation of pools of each treatment, which were subjected to lyophilization. This procedure was equal to eggs stored for 28 days and at age 45. Dry, gray, ethereal extract and gross protein was determined. The data were subjected to analysis of variance through the R-Studio program, and the meanings when significant were compared by the 5% Tukey test. Fresh and refrigerator eggs, regardless of the bird's creation and age system, showed better values of external and internal characteristics. Younger birds had better bark thickness values, gem index and Haugh unit regardless of temperature and storage time. The weight of the egg and gem percentage was larger in older birds at both temperatures and 28 days of storage. Cage, fresh and refrigerated eggs were heavier from the 7th to the 7th of storage, and had a higher rate of yolk and shell thickness. Specific gravity and yolk color were larger in redneck eggs at all three temperatures. The pH of the albumen and gem increased at both temperatures and with storage time, regardless of age and the creation system. The creation system did not affect the centesimal composition of eggs. The percentage of dry matter and gross protein were higher in older birds regardless of temperature and storage time. Dry matter reduced in the environment and on day 28, while for gross protein occurred the opposite. The ethereal extract was smaller in young bird eggs and increased by storage for older lanes.
