The seasonality of forage production is a challenge for livestock production in Brazil. The elephant grass (Pennisetum purpureum Schum.) silage is widely used, however, this plant may present high humidity and unfavorable fermentative traits at the ideal harvest period. The inclusion of food industry residual (baking) may be a viable strategy to improve the fermentative traits of silage, increasing the dry matter content and soluble carbohydrates. This experiment was carried out at the Federal Rural University of Rio de Janeiro, Brazil, aiming to evaluate the effect of harvest period and the inclusion of food industry residual on fermentative traits and silage chemical composition. Elephant grass was harvested to ensile into mini-silos at 70; 84 and 98 days of regrowth, with the inclusion of 0; 5; 10 or 15% of the baking residue. After 45 days of fermentation, the mini-silos were opened to evaluate the fermentative traits and chemical composition of the silage. The design was completely randomized, in a factorial arrangement with three (03) harvest periods and four (04) inclusion doses (3x4), with four replicates (mini-silos) per treatment (n = 48). The tests were carried out for assumptions for variance analysis. The effects of harvest periods (days) and doses of additives (%) were evaluated by orthogonal polynomial contrasts, adopting the polynomial of greater significance degree (P<0.05). The elephant grass harvest period did not influence the dry matter content of the silage (P=0.2126). The inclusion of baking residue doses in elephant grass silages with different harvest periods did not change pH (P=0.1466), but increased linearly the temperature (P<0.0001), NH3/N total (P<0.0001), and non-fibrous carbohydrates (P=0.0024), and decreased linearly the neutral detergent fiber (P<0.0001) and acid detergent fiber (P<0.0001). The inclusion of 15% of bakery residue is sufficient to achieve considerable improvements in the quality of elephant grass silage and, considering the economic aspect, can be adopted.
