The objective was to establish industrial parameters of extrusion for the concentrate production containing soybean hulls or sugar beet pulp (SBP), as well the acceptance by the horses. The industrial extrusion procedure was performed to evaluate the inclusion effect of soybean hulls (SH) and sugar beet pulp (PB) and the extrusion's machine controls. The center composite design was used in a factorial arrangement 23 with four central points. The independent variables were: fiber rich products inclusion (20, and 40%), from two different fiber sources soybean hulls (% SH) or sugar beet pulp (% SBP); Temperature of the last zone of heating on the cannon (100 and 140°C) and the moisture content (17 and 23%). Totalizing 12 mixtures for each raw material that had passed through a single screw extruder. Response variables evaluated were: bulk density (DA), expansion's idexes (LEI; SEI; VEI), water absorption (WA) and solubility indexes (ISA), paste viscosity (RVA), specific mechanical energy (EME) and rupture force (N). The results from the different raw materials were analyzed independently. As it was possible to produce viable kibbles from 40% incusion of both raw materials. The Anova was carried out and the interactions were described by regression on a response surface considering 40% inclusion of the raw material. After the industrial parameters were defined, the evaluation with the animals was carried out in order to evaluate the acceptance from two extruded products containing 40% fiber souce inclusion. The intake and ingestive behavior assay were performed with a completely randomized design with repeated measures in time. Two treatments were used: one extruded concentrate containing 40% inclusion of soybean hull and another with 40% inclusion of sugar beet pulp, five observations were performed over time with 12 replicates (animals). The response variables evaluated were: dry matter intake (DMI), ingestion rate (IR%) both quantified along 3 minutes by the preference test, feeding behavior analysis and glycemic response. DMI and IR% were submitted to ANOVA at 5% probability by SAS statistical package. The behavioral variables were analyzed by descriptive statistics and by a non-parametric Kruskal Wallis test and the means were compared by the Student Newman-Keuls at 5% significance. There was a significant effect on the expansion property, apparent density and mechanical energy of the extrudate containing soybean hulls (p <0.05). The extrudate containing sugar beet pulp had a significant effect on expansion property and specific mechanical energy (p <0.05). There was a tendency, by the descriptive analysis, that the extruded concentrates containing SH and SBP obtained lower viscosity when compared to the milled concentrates. Significant effects were observed for total intake (p <0.0001), with the highest intake observed for soybean hulls. There was a significant difference in the IR% between the concentrates (p <0.0001), with soybean hull being the highest value. It is concluded that the production of extrudates containing 40% CS and 40% PBE is possible and may be beneficial for horse feeding and are well accepted. The horses preferred the extruded concentrate containing 40% inclusion of soybean hulls.
