SUMMARY:

Conilon coffee (Coffea canephora) is a coffee variety resistant to hot, low-altitude climates, compared to Arabica coffee, a species adapted to colder, higher-altitude climates. The conilon coffee drink has a higher caffeine content and thus becomes a preferred product for preparing espresso coffees, blends and drinks. The Agroecological Farm at Km 47 has a conilon coffee plantation, a Robusta variety, in production after harvesting two years ago (2022). Considering that Conilon is planted in Espírito Santo, the Northeast and Roraima regions, the chemical and sensory tests carried out from this project will be integrative with these regions of the country, enabling partnerships of a scientific nature and developments of commercial applicability. In addition to the possibility of forming networks, the local impact in the municipality of Seropédica (RJ) has the potential to offer an institutional product for consumption. Another variable to be highlighted is that Fazendinha coffee is organic, meeting a growing demand for this type of product. The objective of this work is to evaluate the organic coffee produced at Fazendinha Agroecológica, as well as to study its applicability in alcoholic cocktails prepared with cachaça. Chemical and sensory analyzes of the product will be carried out, and formulations of the aforementioned drinks will be developed, with coffee grown in Seropédica as the star ingredient.
