The banana is a product rich in various minerals, especially potassium, which plays crucial roles in the human body. Additionally, its peel also contains various nutrients, providing health benefits. Itaguaí is a region with a predominant biome featuring morphological and biotic characteristics similar to the Atlantic Forest areas, with a profile of a ombrophilous forest and a climate of rainy summers and dry winters, creating favorable conditions for banana production. Therefore, Itaguaí's bananas have distinct qualities, confirmed by analyses conducted in laboratories of PESAGRO-RIO and LABSCAL – UFSC, showing high potassium content and elevated ºBrix values (above the national average). Seeking to develop a product that is easy to produce and accepted in schools, this project aims to create a sugar-free banana candy with the addition of peel in its composition for inclusion in the municipality's school meals. It will require awareness-raising efforts among education nutritionists to include it in public calls for demand and offer it in schools. In addition to extending the shelf life of a product that would otherwise be offered fresh, it will add value, generating income for family farmers. The study can be expanded to neighboring regions since the coverage area of Itaguaí's bananas includes Seropédica, Piraí, Rio Claro, and Mangaratiba.
