RESUMO:

Strawberry is a fruit, admittedly, with a relatively short shelf life, which is a major obstacle to its commercialization. Thus, this work intends to compare some viable alternatives that aim to improve and postpone the post-harvest quality of the strawberry. The treatments were: ozonated water, two forms of control with post-harvest fungal bioantagonists and use of alkaline electrolyzed water in mature strawberries of the 'Portola' cultivar, produced under the principles of organic agriculture in the region of Brazlândia-DF. Besides these, in the experimental set up, two more control treatments were adopted (water from the supply system and strawberry in the absence of any treatment). Fruit quality analyzes were carried out in four moments: in the first 24 hours after the immersion in the treatments or time zero (0), three (3), six (6) and nine (9) days. The experimental design was completely randomized in factorial (6 treatments x 4 evaluation times), with three replications. During this period, the strawberries were stored in the BDA chamber at 5 oC. In the biological analysis stage, the presence of molds and physicochemical analysis were evaluated: mass, pH, total titratable acidity (TTA), total soluble solids (SST) and SST / ATT ratio (Ratio). With the data collection, analysis of variance was promoted. An alkaline water efficiency was observed in relation to mold control. Regarding the physical-chemical analyzes of all treatments, none of them significantly affected these parameters. Thus, the use of alkaline water in the post-harvest period shows promise in the reduction of the mold population without affecting its physicochemical integrity, increasing the shelf life of the strawberry
