SUMMARY:

Kombucha is a carbonated fermented beverage with a slightly acidic sweet taste that has gained popularity for its possible health benefits. Although it is considered a new drink in the market, kombuchá is an ancient drink, which emerged in China (221-206 BC), became popular in Europe during World War II and spread in Brazil as another functional drink option . Kombucha is obtained through the fermentation process of the infusion or extract of Camellia sinensis Added from a sugar source by symbiotic culture of microbiologically active bacteria and yeasts (SCOBY). Factors such as the increase in consumption and the popularization of artisanal production of the drink in homes, caused a concern by the competent regulatory bodies. In 2019, the Ministry of Agriculture, Livestock and Supply, quantity or identity identity and quality of the drink, analyzing parameters such as pH, alcohol content, volatile acidity, presence of contaminants and making the registration of producers mandatory. Through a bibliographic survey, research with the regulatory agency and interviews with producers and consumers, this study aims to assess the difficulties encountered by small producers in adapting the artisanal production of kombucha to the standards established by MAPA to regularize the requirements and subsequently market the product, The advantages of regularizing production, with the objective of providing the necessary information to contribute to the development of the small producer in a competitive way in the domestic market, guaranteeing the food safety of the product.
