SUMMARY:

This study aims to present an experience report on the commercialization of shimeji mushrooms in the National School Feeding Program (PNAE). The study explores the challenges and opportunities faced by organic producers when introducing an innovative food into school meals in the municipalities of Paty de Alferes and Miguel Pereira, highlighting the impacts on the local economy and food and nutritional security. The experience report will be based on the script proposed by MUSSI (2021). Culinary preparations with shimeji and preparation technical sheets will be developed in accordance with the principles of the Food Guide for the Brazilian Population (BRASIL, 2014) and in accordance with Law No. 11,947/2009, which provides for school meals and its regulation by Resolution CD/FNDE No. 06/2020 and its amendments. Labels for mushrooms will be developed based on RDC/ANVISA nº 727/2021, RDC/ANVISA nº 429/2020 and IN/ANVISA nº 75/2020. In addition, workshops on culinary preparations with mushrooms and a booklet for school cooks will be developed.
