RESUMO:
 
The processing of fruits of the cerrado in agroindustries of the north of Minas Gerais has a great productive potential. However, there are difficulties in organizing and managing production. The research will analyze three production units in the municipalities of Bonito de Minas (Community Fresh Water), Heart of Jesus (Community Salto) and Lagoa dos Patos (Old Goiabeira Community). Productive and organizational data will be evaluated for a strategic planning of agroindustries with a differentiated approach in the chain of values to guarantee competitive advantages and be sustainable over time. A profile of the agroindustries and their associates will be drawn up through a diagnosis using a structured questionnaire; evaluation of the phytosociology inventory of the collection areas by dendrometric methodology and the analysis of 03 processed products, verifying the nutritional data for labeling and the sanitary innocuity of the food produced. In possession of the data, it intends to support the business plan of the researched institutions and subsidize public policies of food and nutritional security in MG.
