Application of Green Banana Bimass (Musa
spp.) as a technological product in preparations served in school meals in the
municipality of Seropédica - RJ

Green Banana Biomass (Musa spp.) is a product that is on the rise and has been studied in
depth, it stands out for being a technological product, it can be applied in food preparations
without altering sensory characteristics (color, flavor, aroma, texture) of the same. Along
with this, Green Banana Biomass (BBV) has significant nutritional characteristics such as
Resistant Starch (RS). These nutrients from the BBV, associated with adequate nutrition,
have a significant impact on the lives of students when implemented in school meals,
helping in the learning process. Aiming at the current scenario of food insecurity that
affects thousands of Brazilians, low-cost nutritional strategies are sought to compose these
meals, it is understood that the BBV can be an excellent strategy to add nutrients to the
preparations since it fits in the nutritional aspects and socioeconomic. The implementation
of this strategy in the School Feeding Program of the Municipality of Seropédica - RJ,
covers a large number of individuals and this positive impact regarding food becomes
significantly greater.
