SUMMARY:

This qualification project, linked to the Postgraduate Program in Food Science and Technology at UFRRJ, investigates the potential of the red seaweed Lithothamnium calcareum (LC) in the development of a beverage with high nutritional density and functional potential. The rationale is based on the search for sustainable food alternatives and the fact that Brazil possesses the world's largest deposits of these calcareous algae, which stand out for their mineral profile rich in calcium and magnesium, in addition to the presence of other important minerals such as sodium, potassium, chlorine, sulfur, iron, and various trace elements with calcium bioavailability superior to other conventional sources. Despite this potential, it has been used for soil correction and in animal feed, and although there are some applications for human consumption on other continents, there are not many records of its use in food or beverages in Brazil. The overall objective is to evaluate the biotechnological applicability of LC algae in the development of a beverage with functional potential, offering high-density nutritional supplementation, sustainable, with high mineral bioavailability and microbiological safety for people who practice exercise, aiming at improving their quality of life and health conditions, in partnership with the company Santa Eliza. To this end, the methodology includes the physicochemical characterization of the raw material, the optimization of solubility through reaction with organic acids (citric and malic acid), and the evaluation of functional properties, including antioxidant activities and positive effects on beneficial bacteria. Furthermore, the study will employ the in vitro simulated digestion protocol (INFOGEST 2.0) to determine the bioavailability of minerals and will conduct sensory acceptance tests to validate the developed formulations. This research is expected to advance scientific knowledge about natural marine actives and offer a functional beverage that aids in the prevention of pathologies and the promotion of bone health.
