Pyllium is a soluble fiber that has health benefits such as reduction in LDL cholesterol, reduction in glycemic rates, intestinal regulation and others. The ANVISA and the FDA recognize this fiber as a product claiming health. The proposal of this research is to elaborate a banana frozen pulp added with psyllium in order to offer consumers an easily consumed product that can promote a better quality of life.Shelf life, pH, total solids, titratable total acidity, centesimal composition, microbiological analysis, color determination, viscosity, antioxidant capacity and bioaccessibility will be evaluated. The sensorial evaluation (acceptance test with hedonic scale) will be performed with pulps beaten in a blender using milk. It is hoped that the addition of psyllium to frozen banana pulp may offer consumers a choice of a health food, to stimulate the industry to produce health claims with psyllium
