RESUMO:

The present research intends to under stand the working relations and living conditions of the workers of jerked beef factory/meat packing São Domingos, located in the rural area of Jaguarão, Rio Grande do Sul, where a meat packer overlapped during these cond half of the century XX, reducing, but not extinguishing, the production of jerked beef in this productive unit. This processo ccurred between 1950, they ear of the founding of the Cooperativa de Carnes e Derivados da Zona Sul Ltda. (formed by breeders of the region whounder took the frigorification of this jerked beef factory), and the year of 1990 with the closure of the activities of the production unit. The transformations that have occurred change the objective class determinations on the lives of workers by imposing anincrease in work intensity, time controland restriction of access to beef.

We will analyze the class situations based on the resistance strategies developed by the workers. The appropriation of beef was high lighted in the strategies of the workers. We will discuss some dimensions and meanings for those who did, from which referential were founded these actions.
