SUMMARY:

This dissertation addresses labor relations, workers’ living conditions and the productive organization in the São Domingos’ charqueada (jerked beef processing plants), located in the rural area of Jaguarão/RS, between 1950 and 1980. In this research we analyze in a historical perspective the charqueada being superseded by a modern meat industry, seeking to understand the particularities of the works’ processes and social formation. Structural transformations altered objective class determinations in workers’ lives by inflicting a factory disciplinary logic with increased work intensity, time control and restricted access to meat as part of the workers alimentation. The research was based mainly on the analysis of administrative documents of the Cooperativa de Carnes da Zona Sul Ltda. and on interviews with workers from the production plant. The central problem of this research is to understand class conflicts in the context of a bottom-up story. The meat appropriation stood out as one of the main strategies developed by the workers. We will discuss some dimensions and meanings for those workers who did so and scrutinize which references these workers' resistances were based on, within a new context of exploitation and domination.
